In college, I was pretty much broke. Okay – in college AND for a good while after college, too. Money for groceries was limited, but I learned to make due with minimal ingredients that could be used in lots of different ways. My grocery budget has expanded slightly since then, but I still make a number of these college go-tos. Maybe it’s nostalgia, but I’m pretty sure they are also just plain good. And also easy. And still cheap.
This version of Huevos is super simplified. Though I’m a huge fan of making things from scratch, there’s none of that here.
Prep/Cook Time: 15 minutes (yep!)
Ingredients n’ thangs:
- Corn Tortillas
- Can of Black Beans
- Can of Corn
- Can of Green Chillies
- Grated Cheese
- Green Onions
Combine black beans, corn and green chillies in a pan to warm. Add cumin, chili powder and garlic powder to taste. Next, warm the tortillas in a skillet browning both sides. Lay first tortilla flat on a plate and then add a layer of the bean/corn/chillies mixture and sprinkle with cheese. In a separate pan prepare 1-2 eggs, any style. The college me, always did 2 over easies – the kind with runny yolks. Place eggs on top of bean mixture and top with salsa avocado and green onion.
Lastly, add the second tortilla on top and don’t forget hot sauce!
This is also one of my favorite “breakfast for dinner” options. It’s easy enough to make for 1, but also very doable for a bunch of pals.
