Guilt-less Granola

I don’t know about you, but I looove a good granola.  Toss it on some yogurt, mix it in with some oatmeal or eat it as cereal with milk…  Yum.

I don’t buy or eat it often though, because so many of them are packed with refined sugar, processed ingredients and other preservatives.  I’ve tried making it a few times and it’s lacked flavor and crunch.  And let’s be honest – it needs to crunch.

After a few tries though – I think I’ve done it!  This granola has still has some sugar, but it’s limited and everything else is clean.

Ingredients n’ thangs:

  • 18 ounces rolled oats
  • 1/4 cup brown sugar
  • 1/2 cup coconut oil
  • 1/3 cup honey
  • 2 tsp vanilla
  • 1/2 cup cacao nibs
  • 1 cup organic coconut

In a large bowl combine oats and brown sugar.  Add coconut oil, honey and vanilla and mix well with your hands.  Spread mixture out evenly on a baking sheet.  Cook at 350 degrees for a total of 30 minutes.  You’ll need to set a timer and give the granola a good stir every 5 minutes.  This is how it gets crispy, so don’t skip this step!


Once it’s cooked, let it sit to cool and crisp up.

When it’s reached room temperature you can add whatever you like in your granola.  I kept mine simple this time and added cacao nibs and shaved coconut, but you could also do raisins or other dried fruit, nuts, chocolate chips, seeds, peanut butter chips – anything!




This recipe makes a LOT of granola, so you may want to share with a pal.  It should keep for about 3 weeks in an air tight container.  Ball jars are perf!
