I’ve been on a recent kick of cooking and eating different Asian and Asian inspired meals. Fresh Summer Roles, Pho, Lettuce Wraps, Larb – the list goes on. My refrigerator and pantry, because of this, has been filled with all the necessary ingredients. So, here we are today with an Asian Inspired, Egg-in-Avocado.
This dish is easy enough for a school day and is also a great lunch or dinner on the fly.
Ingredients n’ thangs:
- Bean Sprouts
- Crispy Wontons
- Salt and Pepper
Preheat oven to 400 degrees with rack in the center of the oven.
Slice avocado into 2 halves and remove pit. Scrape a bit of avocado around center with a spoon to make enough room for the egg. Let the avocado rest on counter top to make sure it sits flat without tipping to one side. If it doesn’t, cut a small bit of avocado from the bottom to ensure the avocado will rest evenly and won’t spill the egg.
Spray a small cooking sheet with olive oil. Place avocado onto sheet and then crack the egg into the center. Sprinkle salt and pepper.
Bake egg until it’s cooked to your preference (about 10-15 minutes). Carefully remove avocado from the pan and top with bean sprouts and crispy wontons. Finish by drizzling Sriracha over the top and enjoy.
Oh – I also added crushed peanuts… which was pretty delish. So – you should probably do that too!
