Breakfast Tacos – because it’s never too early for a taco.
This is another recipe that I love because it can be modified depending on what you have on hand. All you need is corn tortillas, eggs and then the rest is determined by whatever you’ve got in your fridge. Leftover meats, veggies, sauces – you name it.
Today’s taco was simple, yet delicious. Since I got carried away with work this am, today was a Breakfast Taco for lunch kind of a day. While it’s never too early for a taco, it’s also never too late either – I’d eat this for any meal.
Ingredients n’ thangs:
- Corn Tortillas
- Turkey Sausage
- Shredded Cheese
- Hot Sauce
Even a very simple breakfast taco is delish – this one took only about 12.5 minutes to make. And tasted as though it took at leaaaast double that.
First thing you’ll want to do is brown the sausage. Once that’s done, heat 2 tortillas on a cast iron pan until warm and browned.
In a separate bowl whisk two eggs, shredded cheese and your sausage, cut into small pieces. Cook in a skillet stirring from time to tim until eggs are fully cooked.
Lay a piece of baker’s twine across your plate and then stack both tortillas on top of one another. Add the scramble mixture and then top with diced tomatoes, avocado, and cilantro.
Once all you’ve added all of your filling in there, carefully tie the taco up for easy eating. Or don’t. I just think it looks cute! Finish with hot sauce.
