I just had the most delightful lunch. My sister in law made the most amazing salad last weekend with kale from her garden and this was my attempt at making something similar.
Something about kale in winter makes a salad feel heartier and almost warm. This one is really simple and clean – I plan on making it alllll week.
Ingredients n’ thangs:
For the Salad
- 2 1/2 Cups Washed, Chopped Kale
- 2 Tablespoons Shredded Parmesan Cheese
- 2 Tablespoons Dried Cranberries, Pomegranate Seeds or Pears
- 2 Tablespoons Roasted Sunflower Seeds
- 1/4 Avocado, Chopped
For the Dressing:
- 2 Tablespoons Olive Oil
- 3 Tablespoons Fresh Lemon Juice
- 1 Tablespoon Honey
Begin by washing and drying your kale and then chopping into thin strips. Whisk together dressing ingredients. Add a portion of the dressing and massage it into the kale with your hands. The dressing above makes more than what you’ll need so you can use whatever amount suits you.
Add the cheese, cranberries, seeds and avocado and mix well.
That’s it! I love this simple dressing so much – it can be used in a variety of ways and you can use any type of citrus. It also doesn’t have any of the yucky additives that store bought dressings often have.
I thought about adding roasted sweet potato up in here too… NOMS.
