We have been on a smoothie/juicing kick in our house. It’s a great way to pack in lots of fruits and veggies andddd it’s delicious. Today I’m sharing our go-to morning smoothie. It’s super easy to make and is great on the go.
I’ve had this extra coconut laying around (bought a bunch to cook Sri Lankan food) so I decided to use it. I’m getting really good at opening these puppies up – I’ll teach you!
Ingredients n’ thangs:
For the smoothie: (Makes enough for 2)
- 1 1/2 Cups Unsweetened Almond Milk
- 1 Scoop Vanilla Protein Powder
- 1 Banana
- 1 Cup of Berries
- Squirt of Lemon
For opening the coconut:
- Phillips head screw driver
- Butcher Knife
If you’re using a coconut you’ll want to start by cutting it open. On one side of the coconut you’ll see three “eyes”. One of these eyes is soft. Take your phillips head screw driver and poke each of the holes until you find the soft one. (It’s usually the largest of the three). Pierce the soft hole until the screw driver has gone all the way through and then swivel in a circle to open up the hole a bit wider.
Tip the coconut upside down on a cup and let all the coconut water drain. (You should keep this to drink! Or add to your smoothie!)
Once the water is drained hold the coconut in one hand with the eyes facing upwards. At this point there will be a mouth – the hole you pierced. And two eyes – the holes you did not pierce. Hold the coconut in one hand so that the face I just described is looking right at you. VERY CAREFULLY (and at your own risk) take your butcher knife and hit the coconut square between the eyes. Twist the coconut forward and follow along that same line until you’ve gone all the way around the coconut. It should start to break across the middle and then you can pry it open with your knife.
If I’m not describing this well or if you’re nervous you can drain the water and then put it in to plastic bag. From there take it out on the porch and beat it with a hammer until is breaks open. This is sort of a joke, although I have used this method… It’s not that pretty, but it works.
Rinse the coconut so that it’s ready for use. If the hole is on the bottom of the “cup” you can cut off a small piece of coconut and wedge it into the hole as a stopper. It may not seem like this would work, but it does! Not single drip!
Okay now let’s make the smoothie, this is the easy part.
In your blender add all smoothie ingredients and blend well with ice. If you used a coconut you should absolutely add some of that coconut water in place of some of that almond milk and you should also most definitely scrape some fresh coconut flesh to top your smoothie off. YUM.
