I’ve been patiently waiting for summer and am so pleased she’s finally arrived! We’ve had a nice stream of HOT days here in Boston. At 5 months pregnant I’ve been on the prowl for great mocktails. While most of my pals are cooling off with cold beers, mules, sangria and the like, I’ll be happily sippin’ on this homemade strawberry lemonade. (And feelin’ fly in the morning too!)
Ingredients n’ thangs:
- 10-12 Strawberries – Washed and Quartered
- 1 Cup Sugar Divided
- 1 Cup Fresh Squeezed Lemon Juice
- 6 Cups Water
- Handful of Fresh Mint
Start by washing and cutting your strawberries. Set aside in a bowl with 1/4 cup of the sugar to let the strawberry juices come to life.
Bring 1 cup of water to a boil and add 3/4 cup of the sugar. Stir and heat until the sugar is dissolved and then set aside.
Squeeze your lemons until you’ve rendered 1 Cup of freshie squeezed juice.
In your pitcher, start by adding 6 Cups of Water. Add the simple syrup you made on the stovetop, the sugared strawberries and the lemon juice and allow to chill. You can add the mint at this point, or use it for garnish – whichever you prefer.
Serve on ice. I also like to add some soda water. It lightens it up a bit and then I can enjoy a few without the sugar high.
