Not Your Grandma’s Banana Muffins

As part of a new year, new start /slash/ I ate too many goodies over the holidays, I’ve been getting myself back into the swing of things with my workout schedule and eating clean.  The more you make the effort and learn how to grocery shop and prep, the easier it gets.  There are so many options out there to take the things we enjoy and make them a lot healthier for our bodies…. here’s just one!

These muffins don’t have any flour or butter.  (That’s why they ain’t like Grandma’s recipe).  They are a little bit denser than some muffins, but still light and airy.  These are husband approved too, so bake ’em up and pass ’em around!

Ingredients n’ thangs:

  • 2 Bananas
  • 2 Eggs
  • 2 Cups Rolled Oats
  • 1 Cup Plain Greek Yogurt
  • 1 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/8 Cup Truvia OR 1/4 Cup Brown Sugar  (Choose Just One)
  • 1/2 Cup of Chocolate Chips

The original recipe called for brown sugar, but I used Truvia as a substitute to keep it clean.

Preheat oven to 400 degrees.

Set up your muffin tin with muffin liners.  You’ll want to spray these with non stick spray since this recipe doesn’t have any butter/oils.

Put everything except for the chocolate chips into a food processor and blend until smooth.  Mix in your chocolate chips by hand with a spoon.

Distribute evenly across your muffin tins (Makes 10-12)  Bake 15-20 minutes or until a toothpick can be inserted in the center and comes out clean.
